Columbus Hops makes a great dual purpose hops in beer. It brings both a bitterness kick to the table as well as strong dreamy aroma. Columbus brings a 14%-16% alpha acid rating to the table, making it ideal for laying the bitter foundation for beers such as Pale Ales, India Pale Ales, Stouts, and anything Imperial. In the same capacity this variety is commonly used for late-boil or dry hopping for its herbal, earthy character. The aroma is pleasing and citrus notes may be found in fresh batches.
Simcoe Hops is a dual purpose hops with high bittering potential. The alpha acid content comes in at 12.0%-14.0% with a relatively low beta acid content of 4.0%-5.0%. The co-humulone for this variety is very low (among the lowest) at 12.0%-15.0%. In total this makes Simcoe a good choice for foundational type bittering in beer. Simcoe is also known for its aromatic qualities. And is described as both fruity and an herbal piney earthy fragrance.
Also known as HBC369, Mosaic is the first born child of Simcoe. Some have described it as Citra on steroids, but it’s much more than that. Rich in Mango, lemon, citrus, earthy pine, tropical fruit, herbal and stone fruit notes. Mosaic combines a very complex hop aroma with fairly high alpha-acids and low cohumulone which makes it a perfect triple purpose hop (Bittering/Flavor/Aroma). This combination ultimately provides clean bitterness and aroma profiles that cannot be accomplished by other hops or blends, truly a one of a kind and yet another “wonder hop” .
